Tara Gum: A derivative with many solutions


In Peru there are approximately over 25 000 plants of 250 thousand on the planet. Some 1,400 species have medicinal properties, in fact, the flora is the main input for the global pharmaceutical and biotechnology. This wealth is an advantage that Peru should take advantage. Indeed, one of the products that the country can operate, is called tara gum.


Tara is a curiously shaped tree twisted and gloomy aspect, which takes place on the coast and mountains up to 3,000 m altitude. Measures up to 5m high, grows wild and cultivated in sandy and rocky soils, and its branches open and thorny, producing a pink flattened pods 10cm long. Has many properties: it produces a paste that stabilizes food cure tonsillitis, fever, flu, heal wounds, prevent hair loss and is effective against lice and insects.


Peru is the largest producer of tara in the world, but exports only 5 000 tonnes, down from more than 10 thousand consumed the world market.


Tara gum, its main product, is a galactomannan from the endosperm of the seed of the fruit of the tare. Acts as a natural thickener high viscosity at low concentrations, has good synergy to combine with other natural and synthetic agents, plus a soluble in hot or cold temperatures. The most important uses are given in the field of ice cream, yogurts, cheese spreads, juices, jams, custards, puddings, dried soups, meat products, bread and pastries.


Tara gum may be a potential product for export to other countries, also the products that you can get beyond our imagination, which should encourage exports from the regions and to decentralize the country's growth.
